Nandroid backup is mainly used to take backup of Stock ROM. Once you installed the CWM recovery in your HTC One V device; start to take nandroid backup by following our given below instructions.

Instructions:
1. First press the power button once to go to Hboot.
2. Press Volume Down/Up to navigate the menu to Recovery, press the Power button once.
3. Once you entered into the recovery menu:
- Click the Backup and Restore
- Again click the backup
4. Now, the backup process is running, it will take few minutes to complete.
5. Once the process is complete, check whether the backup is successful.
6. Click backup and restore.
7. Again click restore.
8. You will see your Backup files: (e.g 2012-06-12.0.13.04 Please make a note that it is an example only you will get a different one)
9. Click Go Back or use the back button
10. Click Reboot System now to boot your device.
11. Once fully booted, mount your SD card to PC, browse to \clockworkmod\backup and copy the 2012-06-12.0.13.04 folder to your PC as a second backup in case something is wrong with your sdcard.
Alternatively, you can also use TWRP recovery for nandroid backup instead of CWM recovery. But this too differs for GSM version and CDMA version.
That’s it now, you are ready to do the rooting process. Once you root your device you can flash any custom ROM or custom kernel or whatever you want. If soft brick happens and there is no official RUU, a stock nandroid backup may helps you.
